 EGG FRIED RICE


Ingredients:

  • Boiled white rice - 1 cup
  • Eggs - 3 to 4
  • Butter or oil- 3 tsp
  • Garlic - 3 to 4 (finely chopped)
  • Green chillies -2 to 3(finely chopped)
  • Capsicum - 1 (sliced)
  • Milk - 2 tbsp
  • Soya sauce - 1/2 tsp
  • Salt and Pepper to taste

For Garnish:

  • Spring onion - 2 tbsp (finely chopped)

 

Method:

In a large bowl lightly beat eggs, milk and 3 tsp of butter  together.

Microwave and scrambled the eggs stirring in between until the eggs harden for about 3 to 5 minutes. 

Add capsicum, garlic, green chillies, pepper powder and salt and microwave for 5 minutes , then stir with a fork. Mix spring onion and soya sauce and cook further for 2 minutes.

Stir the mixture into the boiled white rice.

When ready to eat, sprinkle 2 to 3 tbsp water and microwave for 5 minutes. Place in a serving dish and sprinkle the rest of the chopped spring onion on top.

Serve hot with tomato sauce.
