MASALA SCRAMBLED EGGS
Ingredients:
- Oil or Butter - 1 tbsp
- Lightly beaten eggs - 5
- Onion - 1 (finely chopped)
- Garlic - 2 to 3 flakes (finely chopped)
- Green chillies - 2 to 3 (finely chopped)
- Tomato - 1(finely chopped)
- Capsicum - 1(finely chopped)
- Boiled potato - 1 small size (finely chopped) (optional)
- Turmeric powder - 1/4 tsp
- Cummin seed - 1/2 tsp
- Curry leaves - few
- Salt and pepper to taste
For Garnish:
- Finely chopped coriander leaves
Method:
In a microwave safe bowl mix oil or butter with curry leaves,garlic, green chillies, onion and cummin seeds and cook for 2 minutes.
Stir in the rest of the ingredients, except coriander leaves and microwave for 3 minutes more stirring in between so that the eggs get scrambled but not hardened.
Garnish with coriander leaves on them. Serve immediately on toast, as a starter or as a breakfast dish.
