 MASALA SCRAMBLED EGGS


Ingredients:

  • Oil or Butter - 1 tbsp
  • Lightly beaten eggs - 5 
  • Onion - 1  (finely chopped)
  • Garlic - 2 to 3 flakes (finely chopped)
  • Green chillies - 2 to 3 (finely chopped)
  • Tomato - 1(finely chopped)
  • Capsicum - 1(finely chopped) 
  • Boiled potato - 1 small size (finely chopped) (optional)
  • Turmeric powder - 1/4 tsp
  • Cummin seed  - 1/2 tsp
  • Curry leaves - few
  • Salt and pepper to taste

For Garnish:

  • Finely chopped coriander leaves

Method:

In a microwave safe bowl mix oil or butter with curry leaves,garlic, green chillies, onion and cummin seeds and cook for 2 minutes.

Stir in the rest of the ingredients, except coriander leaves and microwave for 3 minutes more stirring in between so that the eggs get scrambled but not hardened.

Garnish with coriander leaves on them. Serve immediately on toast, as a starter or as a breakfast dish.
